About this Unit

This innovative unit introduces the concept of functional food products, foods which make health claims, and product development in the food manufacturing sector. It covers the unique issues related to the development of functional food products including regulatory aspects, critical evaluation of the evidence for health claims, efficacy and safety considerations, food processing and shelf life stability challenges, as well as considering the consumer and marketing. Independent critical thought and self-directed learning are encouraged through evaluating the evidence for health effects from a range of bioactive components in food. Project management skills and various communication skills will be emphasised and developed through a collaborative food product development project.
